This is probably a modification of:

Pernae cocturam: ex aqua cum Caricis cocta simpliciter, ut solet, inlata cum 
buccellis, caroeno vel condito.  melius, si cum musteis.

Apicius, Book VII, Chapter IX, 2.

Boiled ham.  Boil simply in water with dried figs, as usual, it is served 
with rolls, caroenum, or spiced wine, or--better--with sweet wine cakes.

Caroenum is wine or must reduced by 1/3 of its volume.

I don't have Vehling handy to see if the original recipe was derived from 
his translation.

60/40 ratio of pork to fig. Low temp, long time, all falls apart and becomes 
yummy. Salt to taste ... with garum if you have it.
