To those concerned with traditions

Here is an innocent question, as I have only been to two 12th Nights...

Which parts of 12th Night are traditions?

Which traditions might be changed if this event were to become a 
regional event?

I usually spend my time at 12th Night with the bards, so haven't ever 
seen the food fights or paid much attention to the table 
decorations.  I know there is a garb competition as well.  Are there others?
