[Steppes] Flatbread recipe from 12th Night

For those who indicated an interest, here is the recipe used for the flatbread for 12th Night.
   
  Proofing Yeast
  1 tsp Sugar
  1 Envelop Rapid-Rise Dry Yeast 
  3/4 water
   
  Make sure the water is about 110degrees.  Do not use anything less or the yeast will not proof.  Mix the water with sugar and add yeast.  Stir.  Let stand about 10 minutes until the top has doubled in foam.
   
  Bread Mix
  1 1/2 cup whole wheat flour
  3/4 all purpose flour
  *** I used 2 1/4 cups all purpose only***
  Seasoning of choice (I used Poppy Seeds, Chinese Cinnamon, Tumeric and Cardamon)
   
  Once the yeast has proofed, make a well in the center of the flour mixture for the yeast mixture.  Incorporate.  Once incorporated, move dough to floured surface and knead until smooth.
   
  Place in a warm and damp spot (around 100 degrees or so) to rise.  Give it about 30 minutes to rise.
   
  Remove and knead until smooth again (do not over knead!).  Once complete, separate the dough into equal round parts (should be able to get at least 6 pieces).  Flatten each round to about 1/4" or so.  Lightly coat w/ olive oil and place on a very hot griddle.  Brown on each side.
   
  Remove and place into an oven heated to 550 degrees.  Bake until golden brown and puff up a bit.
