I've been plotting the handmade cheese thing since the
contest idea came out. Unfortunately, this texture
thing is causing me problems right down to the wire!
*sigh* If I don't work it out, I might be switching at
the last minute.

Lady Brighid, thanks for the salt idea! I'll try that
on the batch I'm making tonight.
