It is a very bad interpretation of the facts.  During the 15th Century 
lemons and oranges were often replacing verjuice in cooking (just look at 
the recipes), but since Menagier, Tallivent, and a number of sources to 
Maestro Martino call for verjuice, it is obvious that the Crusader's lemons 
didn't cause the verjuice makers to lose much sleep.

Lemons were an expensive imported luxury for much of Europe in period, so 
even if the wealthy used them exclusively, verjuice still had a ready market 
in the general population.
