Ah, yes it is better to not do too many new recipies as that increases the
chance of something going wrong.
I have found that baklava does not freeze well. But is does well in a cool
place for a week. In cold to freezing I have found that it will loose much
of it's crispness. So I see your arguement for the cheesecake over the
baklava.

Yes, I know, however, the cheesecake I have stores well for up to a week
- I know, I have tried it. Still tastes great after 7 days in the
fridge. I love baklava, but have never made it, so perhaps I should
start practicing and see - could be added to the Greek course as it
comes just before the dessert (Spanish) course. :)
