I was kindly asked off list, how does one peel a chickpea?

So i have updated my 16th c. Persian polaw recipe:

The entire polaw process is actually relatively simple, if a little time consuming, but writing it all out sure makes it look complicated!

If i can get sweet limes or sweet lemons in Berkeley in late July, i may teach it at Pennsic. It was delicious. We'll make a MUCH smaller amount. If i can't get the citrus, we'll make something else - there are many other polaw recipes to explore.
