[Sca-cooks] bad meat?

Stefan,

There was a cultural belief that fresh, raw meat smelled bad in the 
Islamic lands. Iirc, it was thought to be the smell of the blood. 
Boiling and skimming the water was believed to get the last of the blood 
off of the meat. Cooks are admonished to discard rancid meat.
